Title: Is this typical? How do you deal with it?

These are not behaviors during arguments or blow ups, but frustrating things that I've begun to notice consistently during peaceful times?  Does your significant other do any of the following things?

Jump to a conclusion about what you're talking about before you're even finished?  My example escapes me, but lets say you're trying to tell a story totally unrelated to them in every way and they start trying to tell you what happened or reacting before you can even finish. 

Hear things that haven't been said?   Not a misunderstanding, or a mishearing but an immediate and completely far out response to things you've said. 

React to any misfortune you've had that you want to talk to them about as though you're blaming them, even if the conversation leading up to it is pleasant and has nothing to do with them?

What I have noticed is every time I talk about an experience I had,  he turns it out to be about him before I can even finish.

Indeed!  I've been accused of interrupting more times than I can count, yet he is so very guilty of this himself!  All I can do is shake my head.  In many ways it really is like trying to have a conversation with a two year old.  It required more patience than I have at times.
