So, much of his wealth is off the books. That you live in an upscale estate would definitely be a red flag for authorities that possible illegal money transactions are occurring should you pursue legal remedies and try to get support for yourself and the children. Undoubtedly he'd want to avoid any deep audit into his financial affairs or be under the microscope for fraudulent financial activity. If he were to try and flee the country with unpaid alimony or child support, it's possible his passport could be seized. There's a lot of legal jeopardy for a husband who walks out on his wife and children. Have you spoken to an attorney about this?

"off the books" makes it harder, but he would still have to swear under oath about what he does or doesn't have.

Eventually a loose end will show up.  Once it is proven he has perjured himself...the issue will switch.

Do you have recordings of his threats?
