I've not paid enough attention or researched issues enough to understand why this is such an issue. Why every time there's a family event, the day before is hell? Why is that I'm scared to even think about trying to make sense of this?

HI and welcome.
I am not sure I understand the full context of your question but (!) if I had to guess I would say that stress and anxiety in anticipation of an event can cause people to act out more.

You are not alone in having those feelings. If we have previously had bad experiences from family events then it is a pretty normal reaction to feel anxiety. We are with you, we have felt it too, it is not comfortable, but it can get easier over time.
